The key lime cake is a delicious and refreshing dessert that combines the tangy flavour of key limes with the sweetness of cake. Ingredients:
1 box of white cake mix
1 cup of key lime juice
1/2 cup of vegetable oil
3 eggs
Zest of 2 limes
1 cup of powdered sugar
2 tablespoons of butter, softened
8 oz of cream cheese, softened
1 teaspoon of vanilla extract
Whipped cream and lime slices for garnish (optional)
Instructions:
Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
In a large bowl, combine the white cake mix, key lime juice, vegetable oil, eggs, and lime zest. Mix until well combined.
Pour the batter into the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the centre comes out clean.
Allow the cakes to cool completely before removing them from the pans.
For the frosting:
In a medium bowl, beat the powdered sugar, butter, cream cheese, and vanilla extract until smooth and creamy.
Once the cakes are completely cooled, spread a layer of frosting on top of one cake layer, then place the second cake layer on top.
Use the remaining frosting to frost the top and sides of the cake.
Garnish with whipped cream lime slices and strawberries if desired.
