Quick and delightful, our easy key lime cake recipe transforms the basic cake mix into a citrus-infused treat that's perfect for any occasion.

Ingredients

  • 1 box of white cake mix
  • 1 cup  of key lime juice
  • ½ cup of vegetable oil
  • 3 eggs
  • Zest of 2 limes
  • 1 cup of powdered sugar
  • 2 tbsp of butter, softened
  • 8 oz of cream cheese, softened
  • 1 tsp of vanilla extract
  • Whipped cream,strawberries or lime slices for garnish (optional)

Instructions

  • Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  • In a large bowl, combine the white cake mix, key lime juice, vegetable oil, eggs, and lime zest. Mix until well combined.
  • Pour the batter into the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the centre comes out clean.
  • Allow the cakes to cool completely before removing them from the pans.

For the frosting:

  • In a medium bowl, beat the powdered sugar, butter, cream cheese, and vanilla extract until smooth and creamy.
  • Once the cakes are completely cooled, spread a layer of frosting on top of one cake layer, then place the second cake layer on top.
  • Use the remaining frosting to frost the top and sides of the cake.
  • Garnish with whipped cream lime slices and strawberries if desired.
