Red velvet cinnamon buns are a delightful twist on a classic treat. Their vibrant colour and rich flavour make them irresistible. Imagine biting into a soft, fluffy bun filled with warm cinnamon swirls. Topped with creamy frosting, these buns are perfect for any occasion.

Ingredients

For the Dough:

  • 2 ¾ cups (345g) all-purpose flour
  • ¼ cup (50g) granulated sugar
  • 1 tsp salt
  • 2 ¼ tsp (1 packet) instant yeast
  • ½ cup (120ml) whole milk, warmed
  • ¼ cup (60ml) water, warmed
  • 1 large egg
  • 3 tbsp (45g) unsalted butter, softened
  • 1 tbsp unsweetened cocoa powder
  • 1 tbsp red food colouring (gel or liquid)

For the Filling:

  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) light brown sugar
  • 1 tbsp ground cinnamon
  • 1 tsp unsweetened cocoa powder

For the Cream Cheese Glaze:

  • 4 oz (115g) cream cheese, softened
  • ¼ cup (60g) unsalted butter, softened
  • 1 cup (120g) powdered sugar
  • 1 tsp vanilla extract
  • 1-2 tbsp milk (as needed for consistency)

Instructions

Make the Dough:

  1. Combine flour, sugar, salt, and yeast in a large mixing bowl or stand mixer.
  2. Whisk together the warm milk, warm water, egg, softened butter, cocoa powder, and red food colouring in a separate bowl.
  3. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
  4. Knead the dough on a floured surface (or with a dough hook in a stand mixer) for about 8-10 minutes, until smooth and elastic.
  5. Place the dough in a lightly greased bowl, cover it with a clean towel, and let it rise in a warm place for 1-2 hours, or until doubled in size.

Prepare the Filling:

  1. Mix the brown sugar, cinnamon, and cocoa powder in a small bowl.
  2. Once the dough has risen, roll it out on a floured surface into a 12×16-inch rectangle.
  3. Spread the softened butter evenly over the dough, then sprinkle the cinnamon-sugar mixture on top.

Shape the Buns:

  1. Tightly roll the dough into a log, starting from the longer side.
  2. Cut the log into 12 equal slices using a sharp knife or dental floss.
  3. Place the slices in a greased 9×13 inch baking pan, leaving a little space between each bun.
  4. Cover the pan with a towel and let the buns rise for another 30-45 minutes, until puffy.

Bake:

  1. Preheat the oven to 375°F (190°C).
  2. Bake the buns for 20-25 minutes until golden brown and cooked through.
  3. Remove from the oven and let them cool slightly.

Make the Glaze:

  1. In a medium bowl, beat the cream cheese and butter until smooth.
  2. Add the powdered sugar and vanilla extract, and mix until creamy. Add milk as needed to reach your desired consistency.
  3. Drizzle the glaze over the warm buns.
