Red Velvet Cinnamon Buns

Ingredients

For the Dough:

  • 2 ¾ cups (345g) all-purpose flour
  • ¼ cup (50g) granulated sugar
  • 1 tsp salt
  • 2 ¼ tsp (1 packet) instant yeast
  • ½ cup (120ml) whole milk, warmed
  • ¼ cup (60ml) water, warmed
  • 1 large egg
  • 3 tbsp (45g) unsalted butter, softened
  • 1 tbsp unsweetened cocoa powder
  • 1 tbsp red food coloring (gel or liquid)

For the Filling:

  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) light brown sugar
  • 1 tbsp ground cinnamon
  • 1 tsp unsweetened cocoa powder

For the Cream Cheese Glaze:

  • 4 oz (115g) cream cheese, softened
  • ¼ cup (60g) unsalted butter, softened
  • 1 cup (120g) powdered sugar
  • 1 tsp vanilla extract
  • 1-2 tbsp milk (as needed for consistency)

Instructions

Make the Dough:

  • Combine flour, sugar, salt, and yeast in a large mixing bowl or stand mixer.
  • Whisk together the warm milk, warm water, egg, softened butter, cocoa powder, and red food colouring in a separate bowl.
  • Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
  • Knead the dough on a floured surface (or with a dough hook in a stand mixer) for about 8-10 minutes, until smooth and elastic.
  • Place the dough in a lightly greased bowl, cover with a clean towel, and let it rise in a warm place for 1-2 hours, or until doubled in size.

Prepare the Filling:

  • In a small bowl, mix the brown sugar, cinnamon, and cocoa powder.
  • Once the dough has risen, roll it out on a floured surface into a 12×16 inch rectangle.
  • Spread the softened butter evenly over the dough, then sprinkle the cinnamon-sugar mixture on top.

Shape the Buns:

  • Tightly roll the dough into a log, starting from the longer side.
  • Cut the log into 12 equal slices using a sharp knife or dental floss.
  • Place the slices in a greased 9×13 inch baking pan, leaving a little space between each bun.
  • Cover the pan with a towel and let the buns rise for another 30-45 minutes, until puffy.

Bake:

  • Preheat the oven to 375°F (190°C).
  • Bake the buns for 20-25 minutes, or until golden brown and cooked through.
  • Remove from the oven and let them cool slightly.

Make the Glaze:

  • In a medium bowl, beat the cream cheese and butter until smooth.
  • Add the powdered sugar and vanilla extract, and mix until creamy. Add milk as needed to reach your desired consistency.
  • Drizzle the glaze over the warm buns.
