Ingredients:

For the dough:

  • 2 1/2 to 2 3/4 cups all-purpose flour
  • 1/4 ounce active dry yeast
  • 1/2 cup sugar
  • 2 teaspoons salt
  • 2 1/2 cups water
  • 1 cup milk

For the filling:

  • 2 pounds of ground beef
  • 1 large onion, chopped
  • 4 cups finely chopped cabbage
  • Salt and pepper to taste
  • Optional: other seasonings like caraway seeds or paprika

Instructions:

Prepare the dough:

  • Combine warm water, milk, sugar, and yeast in a large bowl. Let stand until foamy.
  • In a separate bowl, whisk together flour and salt. Add yeast mixture and mix until a dough forms.
  • Knead dough on a lightly floured surface for about 10 minutes until smooth and elastic.
  • Place dough in a greased bowl, cover, and let rise in a warm place until doubled in size.

Prepare the filling:

  • Brown ground beef in a large skillet. Drain excess fat.
  • Add chopped onion and cabbage to the skillet. Cook until the cabbage is softened.
  • Season with salt, pepper, and any desired additional seasonings. Let cool completely.

Assemble the bierocks:

  • Punch down the risen dough and divide it into equal-sized pieces.
  • Roll each piece of dough into a circle.
  • Place a spoonful of filling in the centre of each circle.
  • Pinch the edges of the dough together to form a ball, sealing the filling inside.

Bake:

  • Place bierocks on a greased baking sheet.
  • Cover and let rise for another 30 minutes.
  • Bake in a preheated 375°F (190°C) oven for 25-30 minutes, or until golden brown.
