Sweet Potato Cheesecake Brownies

Indulge in a delightful treat with a unique twist – Sweet Potato Cheesecake Brownies. This irresistible dessert combines the rich flavours of sweet potato, creamy cheesecake, and decadent brownies in one mouthwatering bite.

Ingredients:

  • Brownie layer:

    • One package (around 18.2 ounces) of dark chocolate fudge brownie mix
    • Half cup chocolate chips (miniature works well)
  • Cheesecake layer:

    • Eight ounces of cream cheese softened
    • Half cup granulated sugar
    • One medium sweet potato, roasted and mashed
    • One large egg
    • One teaspoon of vanilla extract

Instructions:

  1. Preheat your oven to the temperature specified on the brownie mix package. Grease a baking pan (a square pan works nicely).

  2. Prepare the brownie batter according to the brownie mix instructions.

  3. While the brownie batter is prepared, roast your sweet potato. Prick the skin with a fork a few times, then bake it at 400°F (200°C) for 45 minutes to an hour, or until tender. Once cooked, let it cool slightly, then scoop out the flesh and mash it until smooth.

  4. In a separate bowl, cream the softened cream cheese and sugar until light and fluffy. Beat in the mashed sweet potato, egg, and vanilla extract until well combined.

  5. Pour the brownie batter into the prepared pan. Spread the cheesecake layer evenly over the brownie batter.

  6. Bake for 50-60 minutes, or until a toothpick inserted near the center comes out almost clean. The cheesecake layer might still wobble slightly, but that’s okay.

  7. Take the brownies out of the oven and let them cool in the pan for 15 minutes. Sprinkle with chocolate chips (optional) and let them cool completely before cutting and serving.

Tips:

  • Add a pinch of cinnamon or nutmeg to the cheesecake layer for extra sweetness.
  • Want a richer chocolate flavour? Use a brownie mix made for brownies with extra dark chocolate.
  • If you don’t have chocolate chips, you can use chopped nuts or a drizzle of melted chocolate for garnish.
  • Let the brownies cool completely before cutting to ensure clean slices.
