Piadina Bread

Piadina, a thin, warm, and chewy Italian flatbread from Emilia-Romagna, is a favourite worldwide. It’s great for many fillings, from cured meats and cheese to veggies and spreads. It’s a popular street food and a go-to for home cooking, showing off Italy’s rustic food style.

Ingredients

  • 4 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1 teaspoon salt

  • 1/4 cup lard or olive oil

  • 1 cup warm water

Instructions

  1. In a large mixing bowl, combine the flour, baking powder, and salt. Mix well.

  2. Add the lard or olive oil and mix until the mixture becomes crumbly.

  3. Gradually pour in the warm water, mixing continuously until the dough comes together. It should be soft but not sticky.

  4. Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.

  5. Divide the dough into 8 equal portions and roll each into a ball.

  6. Roll out each ball into a thin circle, roughly 8-10 inches in diameter.

  7. Heat a non-stick skillet or griddle over medium heat. Cook each piadina for about 2-3 minutes on each side, until golden brown spots appear and the bread puffs slightly.

  8. Serve warm with your favourite fillings or as a side to complement your meal.
