Brookie Recipe

Brookies are a favourite dessert because they mix the rich brownie texture with the soft cookie texture. They’re great for people who can’t choose between brownies and cookies and let bakers be creative. Whether for a party, a snack, or just for fun, brookies are a perfect treat.

Ingredients:

For the Brownie Layer:

  • 1/2 cup unsalted butter, melted

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1/3 cup unsweetened cocoa powder

  • 1/2 cup all-purpose flour

  • 1/4 teaspoon salt

  • 1/4 teaspoon baking powder

For the Cookie Layer:

  • 1/2 cup unsalted butter, softened

  • 1/2 cup brown sugar, packed

  • 1/4 cup granulated sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 1/4 cups all-purpose flour

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 cup chocolate chips

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking pan.

  2. Mix melted butter, sugar, eggs, and vanilla for the brownie layer in a bowl. Stir in cocoa, flour, salt, and baking powder. Spread the mixture evenly in the prepared pan.

  3. Beat the softened butter, brown sugar, and granulated sugar for the cookie layer until creamy. Add the egg and vanilla and mix well. Gradually blend in flour, baking soda, and salt. Stir in chocolate chips.

  4. Drop spoonfuls of cookie dough over the brownie layer, and gently spread to cover.

  5. Bake for 25-30 minutes or until a toothpick inserted in the centre comes out clean.

  6. Allow to cool before cutting into squares.
