Best Gluten-Free Bread Recipe

By khoni

Gluten-free bread is made without gluten, a protein found in wheat, barley, rye, and triticale. It is specifically designed for people with celiac disease, gluten sensitivity, or those who choose to avoid gluten for other health or dietary reasons.

Here’s a simple and delicious gluten-free bread recipe that you can make at home.

Ingredients:

  • 2 cups (280g) gluten-free all-purpose flour blend (ensure it contains xanthan gum or add 1 tsp separately)
  • 1 tsp salt
  • 1 tbsp sugar or honey
  • 1 packet (7g) instant yeast (ensure it’s gluten-free)
  • 1 cup (240ml) warm water (about 110°F/43°C)
  • 2 large eggs (or flax eggs for vegan option: 2 tbsp ground flaxseed + 6 tbsp water)
  • 2 tbsp olive oil or melted butter
  • 1 tsp apple cider vinegar (helps with rise and texture)

Instructions:

  1. Activate the Yeast:
    • In a small bowl, combine the warm water, sugar (or honey), and yeast. Stir gently and let it sit for 5–10 minutes until frothy.
  2. Mix Dry Ingredients:
    • In a large mixing bowl, whisk together the gluten-free flour and salt.
  3. Combine Wet Ingredients:
    • In a separate bowl, whisk the eggs (or flax eggs), olive oil (or melted butter), and apple cider vinegar.
  4. Make the Dough:
    • Add the yeast mixture and wet ingredients to the dry ingredients. Mix with a stand mixer (using a paddle attachment) or a hand mixer for 2–3 minutes until the dough is smooth and sticky. Gluten-free dough will be more like a thick batter than traditional bread dough.
  5. Let the Dough Rise:
    • Cover the bowl with a clean kitchen towel or plastic wrap and let it rise in a warm place for 45–60 minutes, or until it has doubled in size.
  6. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  7. Transfer the Dough:
    • Pour the dough into the prepared loaf pan. Smooth the top with a wet spatula or your fingers.
  8. Second Rise:
    • Let the dough rise again for 20–30 minutes while the oven preheats.
  9. Bake:
    • Bake the bread for 40–45 minutes, or until the top is golden brown and a toothpick inserted into the centre comes out clean.
  10. Cool:
    • Remove the bread from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
