Ingredients
1 ¾ cups (220g) all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 ½ teaspoons ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground ginger (optional, for a little kick)
Wet Ingredients
1 cup (about 250g) mashed cooked sweet potato
½ cup (120ml) vegetable oil (or melted butter)
⅔ cup (135g) brown sugar
¼ cup (50g) granulated sugar
2 large eggs
1 teaspoon vanilla extract
¼ cup (60ml) milk or buttermilk
You can roast, boil, or microwave your sweet potatoes — just make sure they’re soft and well-mashed.
Optional
½ cup chopped pecans or walnuts
½ cup raisins or chocolate chips
Instructions
Prepare the Sweet Potato
Preheat your oven to 350°F (175°C).
If you haven’t prepped the sweet potato yet, pierce one large sweet potato with a fork, bake for 45–60 minutes until soft, then peel and mash.
Measure out 1 cup of mashed sweet potato and let it cool slightly.
Mix the Dry Ingredients in a medium bowl, whisking them together, and set aside.
Mix Wet Ingredients in a large bowl, combine the ingredients and whisk until smooth and fully combined.
Combine Wet and Dry Mixtures
Add the dry ingredients to the wet ingredients in two parts.
Stir gently with a spatula until just combined — don’t overmix.
Fold in any add-ins like nuts or chocolate chips.
Bake
Grease a 9×5-inch loaf pan (or line with parchment paper).
Pour in the batter and smooth the top.
Bake for 55–65 minutes, or until a toothpick inserted in the centre comes out clean.
Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
