Sweet Potato Bread

Ingredients

  • 1 ¾ cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger (optional, for a little kick)

Wet Ingredients

  • 1 cup (about 250g) mashed cooked sweet potato
  • ½ cup (120ml) vegetable oil (or melted butter)
  • ⅔ cup (135g) brown sugar
  • ¼ cup (50g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup (60ml) milk or buttermilk
  • You can roast, boil, or microwave your sweet potatoes — just make sure they’re soft and well-mashed.

Optional

  • ½ cup chopped pecans or walnuts
  • ½ cup raisins or chocolate chips

Instructions

Prepare the Sweet Potato

  • Preheat your oven to 350°F (175°C).
  • If you haven’t prepped the sweet potato yet, pierce one large sweet potato with a fork, bake for 45–60 minutes until soft, then peel and mash.
  • Measure out 1 cup of mashed sweet potato and let it cool slightly.
  • Mix the Dry Ingredients in a medium bowl, whisking them together, and set aside.
  • Mix Wet Ingredients in a large bowl, combine the ingredients and whisk until smooth and fully combined.

Combine Wet and Dry Mixtures

  • Add the dry ingredients to the wet ingredients in two parts.
  • Stir gently with a spatula until just combined — don’t overmix.
  • Fold in any add-ins like nuts or chocolate chips.

Bake

  • Grease a 9×5-inch loaf pan (or line with parchment paper).
  • Pour in the batter and smooth the top.
  • Bake for 55–65 minutes, or until a toothpick inserted in the centre comes out clean.
  • Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
