Seeded Cottage Cheese Bread

Ingredients

  • 1 ½ cups (180g) whole wheat flour (or a mix of whole wheat and all-purpose)
  • 1 cup (120g) oats (rolled or quick oats)
  • ½ cup (60g) mixed seeds (sunflower, pumpkin, flax, chia, sesame)
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 ½ cups (340g) cottage cheese (full-fat for best texture)
  • 2 large eggs
  • ¼ cup (60ml) milk (or plant-based milk)
  • 2 tbsp honey or maple syrup (optional for slight sweetness)
  • 2 tbsp olive oil or melted butter
  • Extra seeds for topping

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  • Mix dry ingredients: In a large bowl, combine flour, oats, seeds, baking powder, baking soda, and salt.
  • In a blender or food processor, blend cottage cheese, eggs, milk, honey, and oil until smooth.
  • Pour the wet mixture into the dry ingredients and stir until just combined (don’t overmix).
  • Bake: Pour the batter into the prepared loaf pan, smooth the top, and sprinkle with extra seeds.
  • Bake for 45-50 minutes, or until a toothpick inserted comes out clean.
  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
