Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
Mix dry ingredients: In a large bowl, combine flour, oats, seeds, baking powder, baking soda, and salt.
In a blender or food processor, blend cottage cheese, eggs, milk, honey, and oil until smooth.
Pour the wet mixture into the dry ingredients and stir until just combined (don’t overmix).
Bake: Pour the batter into the prepared loaf pan, smooth the top, and sprinkle with extra seeds.
Bake for 45-50 minutes, or until a toothpick inserted comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
