Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Combine the flour, baking powder, and salt in a large mixing bowl.
Add the cottage cheese to the dry ingredients and mix until a dough forms. If the dough is too sticky, you can add a little more flour until it reaches the right consistency.
Divide the dough into 6-8 equal portions. Roll each portion into a ball, then use your finger to create a hole in the middle, shaping it into a bagel.
In a small bowl, beat the egg and brush it over the top of each bagel. This will give them a beautiful golden-brown colour when baked.
Sprinkle your chosen toppings over the bagels if desired.
Place the shaped bagels onto the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until they are golden brown.
Let the bagels cool slightly on a wire rack before serving.
