Ingredients
For the Cookie Dough:
1cup unsalted butter, softened
1cupgranulated sugar
1large egg
1tspvanilla extract
2cups all-purpose flour
½tspbaking powder
½tsp salt
For the Cheesecake Filling:
8 oz cream cheese, softened
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 cup cherry pie filling
Instructions
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a large bowl, cream together the butter and sugar until light and fluffy. Add the egg and vanilla extract, and mix until well combined.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Prepare the Cheesecake Filling:
In a medium bowl, beat the cream cheese until smooth. Add the sugar and vanilla extract, and continue to beat until fully combined and creamy.
Assemble
Scoop out tablespoon-sized portions of the cookie dough and roll them into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
Use your thumb or the back of a spoon to create a small indentation in the centre of each dough ball.
Fill each indentation with a small spoonful of the cheesecake mixture, followed by a dollop of cherry pie filling.
Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Allow them to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
