Mini blackberry pies are irresistibly charming and perfect for any occasion or as a sweet treat at home. They have a flaky crust and tangy-sweet blackberry filling that satisfy both the taste buds and the soul.
Ingredients:

1 pie crust, store-bought or homemade

2 cups fresh blackberries

1/4 cup sugar

1 tablespoon cornstarch

1 tablespoon lemon juice

1 egg (for egg wash)

Optional: vanilla ice cream or whipped cream for serving
Instructions:

Preheat your oven to 375°F (190°C).

Roll out your pie crust on a floured surface and cut out small circles (about 4 inches in diameter). You can use a glass or cookie cutter.

Mix the blackberries, sugar, cornstarch, and lemon juice in a bowl.

Place a spoonful of the blackberry mixture in the centre of each pie crust circle. [you can also use the mini pie pans but instead of cutting the pie crust into small circles, you can use the mini pie pans to mould the dough. Press the crust into the pans, fill with the blackberry mixture, and then cover with another layer of crust if you want. Make sure to cut small slits in the top crust for venting.]

Fold the edges of the dough over the berries, exposing the centre.

Beat the egg and brush the edges of each pie with the egg wash.

Place the mini pies on a baking sheet lined with parchment paper.

Bake for 20-25 minutes until the crust is golden and the filling is bubbly.
