Lemon Blackberry Bundt Cake Recipe

You know what’s great? Lemons and blackberries. This combo is killer. It’s meant to be. It’s like peanut butter and jelly, mac and cheese, cake and ice cream, me and… Netflix. Anyhow. This cake is really soft, yummy, and moist (sorry I hate that word too but it’s appropriate in this case.)  It also smells great. But all lemon things do, right? Once I use up the lemons (zest and juice them that is) I like to put them in the disposal. It makes your kitchen smell clean, even if it’s not, even if you have a sink full of dirty dishes. Trust me on this one.

Lemon Blackberry Bundt Cake Recipe:

For cake

1 c. unsalted butter

2 c. granulated sugar

4 eggs

1 t. vanilla

1/4 c. lemon zest (zest 4 lemons)

3 c. all-purpose flour

1/2 t. baking powder

1/2 t. baking soda

1 t. salt

1/4 c. lemon juice

3.4 c. buttermilk

1/2 c. blackberries

 

For lemon glaze:

3 c. powdered sugar

3 T. milk

1 t. lemon juice

a hand full of blackberries

Instructions: 

  1. Preheat oven to 350 degrees F
  2. In stand mixer with paddle attachment, cream together softened butter and granulated sugar
  3. Add eggs one at a time, mixing between each one and make sure to scrape the sides of the bowl with a spatula to get all the butter and sugar mixture mixed in
  4. Add vanilla, lemon juice, and lemon zest, beat for about 20 seconds on medium speed
  5. In small mixing bowl measure out dry ingredients (flour, baking powder, baking soda, and salt)
  6. Add dry ingredients and buttermilk, a quarter at a time beginning and ending with dry ingredients
  7. Thoroughly spray bundt cake with nonstick spray
  8. Bake at 350 degrees F for about 40 minutes or until cake is done (you can tell it’s done if you lightly touch the top of the cake and it bounces back instead of making an impression)
  9. Let cake cool about 20 minutes before glazing it
  10. For glaze, mix together powdered sugar, milk, and lemon juice. Crush blackberries and mix them in with the rest of the glaze. I didn’t thoroughly mix mine together so it would have a bit of a swirl in it.
  11. Glaze cake
  12. Eat up!
