Mini Blueberry Bundt Cake Recipe

These little guys are delicious. Why are mini things so cute? I think being mini might actually make them taste better too. I could be wrong but I’m pretty sure. And if you don’t have mini bundt pans, this cake works just as well in a regular sized bundt pan. Just a one times recipe ought to do it.

Mini Blueberry Bundt Cake Recipe:

3 1/4 c. flour
1 3/4 t. baking powder
1 t. salt
1/2 c. butter
1 3/4 c. sugar
3 eggs
1 t. vanilla extract
1 1/2 c. milk
3/4 c. blueberries
Directions:
1. Preheat oven to 350 degrees F
2. Cream butter and sugar until light and fluffy
3. Add eggs one at a time
4. Add half of the milk
5. Add half of the dry ingredients
6. Add the rest of the milk
7. Add the rest of the dry ingredients
8. Add blueberries and mix thoroughly
9. Spoon batter into mini bundt cake pan
10. Bake for 16-18 minutes
11. Once cooled, garnish with blueberries and cream or a glaze! (But I liked the berries and cream more.)
